Ingredients
  

  • Oil for pan
  • 1 small onion chopped
  • 1 t ground cumin
  • 3 oz cooked pork shredded or cut in bite sized pieces
  • 1 T chipotle in adobo puree
  • 2 c cooked red beans
  • 1/2 c water broth, or bean cooking liquid
  • 1 hard cooked egg

Instructions
 

  • Heat oil in saute pan. Add onion, and saute until starting to soften. Add cumin, stir, add pork and chipotle. Stir and let heat a few minutes.
  • Add beans and half a cup liquid. Bring to a boil, then simmer for five minutes, to heat evenly and combine flavors.
  • Peel and slice or chop hard cooked egg, and use it to garnish.
