- Oil for pan
- 1 small onion chopped
- 1 t ground cumin
- 3 oz cooked pork shredded or cut in bite sized pieces
- 1 T chipotle in adobo puree
- 2 c cooked red beans
- 1/2 c water broth, or bean cooking liquid
- 1 hard cooked egg
Heat oil in saute pan. Add onion, and saute until starting to soften. Add cumin, stir, add pork and chipotle. Stir and let heat a few minutes.
Add beans and half a cup liquid. Bring to a boil, then simmer for five minutes, to heat evenly and combine flavors.
Peel and slice or chop hard cooked egg, and use it to garnish.
