Gluten Free Gingerbread Muffins

Gluten Free Gingerbread Muffins - sugar free, also, with a touch of sweetness from apples and tang from teff flour.

Ingredients
  

  • 100 g teff flour
  • 100 g millet flour
  • 2 t Gingerbread Spice Blend
  • 1 t baking powder
  • pinch salt
  • 1/2 c broken walnuts opt.
  • 1 egg
  • 1/4 c unsweetened applesauce
  • 3/4 c milk
  • 2 T oil
  • butter or oil to grease muffin tin

Instructions
 

  • Preheat oven to 425.
  • Stir teff and millet flours, spice blend, baking powder, and salt together in a bowl. Add nuts if desired, stir to coat with flour mixture.
  • Beat egg. Add applesauce, milk, and oil, and beat well. Stir liquid ingredients into dry, and stir to mix.
  • Pour batter into greased 6-cup muffin tin. Bake at 425 for 20 minutes.

Notes

Good with butter, luxurious with cream cheese.
