WIAW 180
A few changes are coming our way, in our life, which will affect the way I cook, which will therefore affect what I write about… I’ll tell you more in a couple of weeks, when things are closer. The way I eat will not essentially change – the food will still be gluten free, with an emphasis on easy meals made from fresh ingredients and plenty of vegetables – but some of the outside influences, so to speak, will.
But so, for the next month or two some of these posts may be a little less chatty – and you may notice the recipes getting easier and easier! – as my time and energy are elsewhere. (I’m not being coy – just doesn’t make sense to tell you what is up until I have more information.)
So my fastest and easiest breakfast is bean tacos. I make up a batch of beans, which takes very little time, then just microwave everything, and I can eat it at my desk while I read. I should really write about these… I’m back to hot coffee, in the morning. I don’t remember if I mentioned this… you can make hot coffee with the cold brewed concentrate – the friend from whom I got the idea actually only uses it for hot coffee. I found, though, that I didn’t like the taste as much, so I’m back to a French Press every morning…
Salad, of course, for lunch… Plenty of lettuce and cucumbers. We have bell peppers of all colors – green and yellow, but also purple! Plenty of golden tomatoes – indeed most of the ones we picked up last night are golden. And the cheddar cheese is just vanishing in there… And I enjoyed my pumpkin hummus with apple slices. And, not in the picture, Mary’s Gone crackers (also with hummus.)
I browned chicken thighs, and added some water and frozen sauteed leeks. Simmered that until the chicken was done, then thickened it with a roux cube to make gravy. Meanwhile, there were several small summer squash – I sliced them as evenly as I could, then grilled them. They were done about the same time as the chicken. Simply microwaved the potatoes – one of the best shortcuts ever – and poured the gravy over them as well as the chicken, and had a super easy but rather nice dinner.
